Short Bio
Currently the Chairperson of the Tanzania Association of Food Scientists and Technologists (TAFST) and IUFoST voting delegate, Mercy Mmari is a Senior Food Processing Specialist with more than a decade of experience in leadership, research, training and consulting. Mercy uses her expertise in researching on traditional food systems, training on food safety and technical advisory on vast aspects of regenerative food processing. She has trained about 5,000 food processors and 200 mothers in food quality and safety and has implemented more than 15 product development initiatives while working with several donor-funded projects and as managing partner for TanFoodTech consultancy.
Mercy is a Food safety (ISO 22000:2018) CQI, IRCA Certified Lead Auditor, with an MSc Food Science and Nutrition and BSc Food Science and Technology. She is trained in Post Harvest and Wasted food from Wageningen University, The Netherlands and Leadership and business at Oklahoma State University, USA. She has published, reviewed and presented in scientific conferences around USA, Singapore, Kenya, Uganda and the South Africa and is a YALI Mandela Washington fellow.
Mercy volunteers as a reviewer in three food and nutrition journals and in training women groups on child nutrition. She lives to witness a food secure, this is what drives her daily passion and energy.
